Almond Flour Zucchini Apple Pancakes

Ingredients:

1 small zucchini, grated
1 small apple, grated
1 cup almond flour
½ teaspoon baking powder (skip if you are doing GAPS)
½ teaspoon sea salt
2-3 tablespoons almond butter (you can use any nut butter, really)
3 sprigs of fresh thyme, chopped
3 eggs
1 tablespoon honey (raw, unheated) or maple syrup (use honey if you are doing GAPS)
2 tablespoons of coconut oil

Instructions:

  • Combine apples, zucchini, thyme, honey and almond butter in one bowl
  • Combine flour, salt and baking powder in another bowl
  • Beat the eggs, just slightly
  • Combine all ingredients
  • Heat up the coconut oil and fry pancakes, about 5 minutes per side, without burning.
  • Serve them with yoghurt and fresh fruit or your favorite jam.
