Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 cup onion, chopped
- 3 large celery stalks celery, chopped
- 2 cups sweet potato, peeled and chopped
- ½ teaspoon dried oregano
- Salt, to taste
- 4 cups water
Directions
- Place the oil in the Instant Pot and select “Sauté”. Then add the beef and onion and cook for about 4-5 minutes.
- Select the “Cancel” and stir in the remaining ingredients.
- Secure the lid and place the pressure valve to “Seal” position.
- Select “Soup” and just use the default time of 10 minutes.
- Select the “Cancel” and carefully do a “Quick” release.
- Remove the lid and serve hot.
- Garnish with chopped cilantro and enjoy!
