Beef & Sweet Potato Soup

Serves: 4 persons

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 cup onion, chopped
  • 3 large celery stalks celery, chopped
  • 2 cups sweet potato, peeled and chopped
  • ½ teaspoon dried oregano
  • Salt, to taste
  • 4 cups water


  • Place the oil in the Instant Pot and select “Sauté”. Then add the beef and onion and cook for about 4-5 minutes.
  • Select the “Cancel” and stir in the remaining ingredients.
  • Secure the lid and place the pressure valve to “Seal” position.
  • Select “Soup” and just use the default time of 10 minutes.
  • Select the “Cancel” and carefully do a “Quick” release.
  • Remove the lid and serve hot.
  • Garnish with chopped cilantro and enjoy!
