Ingredients
For Salad:
- 2 cups green cabbage, shredded
- 2 cups red cabbage, shredded
- 2 cups cucumber, sliced
- ΒΌ cup fresh parsley leaves, chopped
For Dressing:
- 2 tablespoons extra-virgin olive oil
- Salt and freshly ground black pepper, to taste
Directions
- In a large serving bowl, add all salad ingredients
- In another bowl, all dressing ingredients and mix until well combined.
- Pour dressing over salad and toss to coat well.
- Serve immediately.
