Coconut Cereal

Ingredients

  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon organic vanilla extract
  • 2 tablespoons water
  • ΒΌ pound unsweetened coconut flakes

Directions

  • Preheat the oven to 300 degrees F. Line 3 baking sheets with parchment paper.
  • In a large bowl, add all ingredients except coconut flakes and beat until well combined.
  • Transfer the coconut flakes onto prepared baking sheets evenly.
  • Bake for about 15 minutes.
  • Remove the baking sheets from oven and stir the flakes.
  • Bake for 5-10 minutes more.
  • Remove from oven and keep aside to cool completely.
  • Transfer this cereal into an airtight container and preserve in the refrigerator for 1-2 weeks.
  • You can enjoy this cereal with any non-dairy milk and fruit topping.
