Ingredients
- 2 bunches collard greens
- 2 tablespoons olive oil
- 1 small yellow onion, cut into thin rings
- 1 garlic clove, minced
- 1 cup water
- Salt, to taste
- Slices of avocado and chopped tomatoes for topping
Directions
- Remove the tough stems of collard greens and then, cut into thin strands.
- Place the oil in the Instant Pot and select “Sauté”. Then add the onion and cook for about 4-5 minutes.
- Add the garlic and cook for about 1 minute.
- Select the “Cancel” and stir in collard greens and water.
- Secure the lid and place the pressure valve to “Seal” position.
- Select “Manual” and cook under “High Pressure” for about 3 minutes.
- Select the “Cancel” and carefully do a “Quick” release.
- Remove the lid and stir in salt.
- Top with slices of avocado and chopped tomatoes and enjoy.
