Ingredients
- 3 cups water
- 2 tablespoons fresh mint leaves, chopped
- 1 package frozen peas
- Salt and freshly ground black pepper, to taste
Directions
- In a large pan, add water over high heat and bring to a boil.
- Stir in mint and reduce the heat to medium-low.
- Simmer, covered for about 5 minutes.
- Stir in peas and simmer for about 5 minutes.
- Remove from heat and let it cool slightly.
- In a large blender, add soup in batches and pulse until smooth.
- Return the soup into the same pan over medium heat.
- Stir in salt and black pepper and cook for about 2-3 minutes or heated completely.
- Serve hot.
