Peas Soup

Serves: 6 servings
Preparation Time: 10 minutes
Cooking Time: 15 minutes


  • 3 cups water
  • 2 tablespoons fresh mint leaves, chopped
  • 1 package frozen peas
  • Salt and freshly ground black pepper, to taste


  • In a large pan, add water over high heat and bring to a boil.
  • Stir in mint and reduce the heat to medium-low.
  • Simmer, covered for about 5 minutes.
  • Stir in peas and simmer for about 5 minutes.
  • Remove from heat and let it cool slightly.
  • In a large blender, add soup in batches and pulse until smooth.
  • Return the soup into the same pan over medium heat.
  • Stir in salt and black pepper and cook for about 2-3 minutes or heated completely.
  • Serve hot.
