Pork Chops & Apples

This is a great breakfast for you if you struggle to fall asleep at night. This breakfast will help you have fewer sugar cravings, more energy, and mental acuity.

 

Serves: 2

Prep time: 20 minutes

Cooking time: 30 minutes

Equipment: 13×9 inch baking dish

 

Ingredients: 

2 cups 1/3 inch cubes peeled celeriac or parsnip

2 small unpeeled apples, cored and coarsely chopped

1 tablespoon extra virgin olive oil

pinch of sea salt

1/2 teaspoon broken pieces star anise

1/4 teaspoon black peppercorns

1/2 teaspoon cloves

2 teaspoons fennel seeds

1 tablespoon finely chopped cinnamon stick

1/4 teaspoon smoked sea salt

2 teaspoons ghee, melted

2 pork rib chops

 

Directions: 

  1. preheat the oven to 400F
  2. grease the baking dish with olive oil (or line with parchment paper). Place the celeriac and apples in the pan, drizzle with the olive oil, and sprinkle with sea salt. Toss until well coated.
  3. In a small bowl, make a slurry of the spice mix, smoked sea salt, and ghee.
  4. Glaze the pork chops on both sides with the spice slurry and place on top of the vegetables.
  5. bake uncovered for 15 minutes. Turn the pork chops over and bake for another 15 minutes.
  6. Serve right away.
