Quinoa & Lentil Soup

Cooking Time: 25 minutes

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cups tomatoes, chopped
  • 1 cup red lentils, rinsed and drained
  • ½ cup quinoa, rinsed
  • 1½ teaspoons ground cumin
  • ½ teaspoon ground turmeric
  • Salt, to taste
  • 5 cups water
  • 2 cups fresh Swiss chard, chopped

Directions

  • In a large pan, add all ingredients except chard and bring to a boil.
  • Reduce the heat to low and simmer, covered for about 20 minutes.
  • Stir in chard and simmer for about 4-5 minutes.
  • Serve hot.
