Salmon Parcel

Serves: 4 persons

  • 4 (3-ounce) salmon fillets
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • 2 red bell peppers, seeded and cubed
  • 4 plum tomatoes, cubed
  • 1 small onion, sliced thinly
  • ½ cup fresh parsley, chopped
  • 2 tablespoons extra-virgin olive oil


  • Preheat the oven to 400 degrees F.
  • Arrange 4 foil pieces onto a smooth surface.
  • Place 1 salmon fillet onto each foil piece and sprinkle with salt and black pepper.
  • In a bowl, mix together bell peppers, tomato, and onion.
  • Place veggie mixture over each fillet evenly and top with parsley.
  • Drizzle with oil.
  • Fold each foil piece around salmon mixture to seal it.
  • Arrange the foil packets onto a large baking sheet in a single layer.
  • Bake for about 20 minutes.
