Savoury Millet Porridge

Ingredients

  • 1 tablespoon coconut oil
  • 1 teaspoon ground ginger
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground cloves
  • 1½ cups millet, grounded
  • 1½ cups water
  • 4 cups unsweetened coconut milk
  • ¼ cup raisins
  • 1 large apple, cored and sliced

Directions

  • In a pan, melt coconut oil over medium-low heat and sauté spices for about 30 seconds.
  • Add millet and stir to combine well.
  • Stir in water and coconut milk and bring to a boil.
  • Reduce the heat to low and simmer, partially covered for about 10-15 minutes or until desired thickness, beating occasionally.
  • Remove from heat and stir in raisins.
  • Serve with the topping of apple slices.
