Tomato Soup

Serves: 4 persons
Preparation Time: 10 minutes
Cooking Time: 20 minutes


  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 2¼ cups tomatoes, chopped finely
  • ½ teaspoon dried thyme, crushed
  • 3 cups water
  • ¼ cup fresh basil leaves, chopped
  • Salt and freshly ground black pepper, to taste


  • In a large soup pan, heat oil over medium heat and sauté onion for about 4-5 minutes.
  • Add tomatoes, thyme, and water and bring to a boil.
  • Reduce the heat to low and simmer, covered for about 15 minutes.
  • Remove from the heat and keep aside to cool slightly.
  • In a blender, add soup in batches and pulse until smooth (or use an immersion blender).
  • Return the soup in the same pan over medium heat.
  • Stir in basil and cook for about 3-4 minutes.
  • Season with salt and black pepper and serve hot.
