6 veggie caviar

This take on the recipe is substantial enough to serve as a stand-alone side, and it also makes a great salad topper. Kids love to scoop it up with blue corn chips (or any crackers you have on hand), as a hearty after-school snack. With 6 veggies in every bite, it’s a winner for parents and for kids!

 

Serves: 4 servings
 Prep Time: 15 m

Ingredients

  • 30 ounce – black beans, canned
  • 15 ounce – corn, canned
  • 5 medium – plum tomato
  • 1 stalk – green onion
  • 1 medium – bell pepper, green
  • 1 medium – bell pepper, red
  • 1 clove – garlic
  • 2 medium – lime
  • 1 teaspoon – sea salt
  • 5 tablespoon – olive oil

OPTIONAL:

  • 4 ounce – tortilla chips

Directions

  1. Drain and rinse black beans and corn. Chop tomatoes, green onion, and bell peppers. Mince garlic.
  2. Add all ingredients above (minus the garlic) to a medium bowl. Stir to combine.
  3. In a smaller bowl, whisk together juice from the limes, oil, salt, and garlic. Pour over the vegetable mixture and fold until evenly coated.
  4. Chill and serve cold. Best when served within 24 hours.

Eat this by itself or serve with tortilla chips and use as a dip. It’s great either way!
