This take on the recipe is substantial enough to serve as a stand-alone side, and it also makes a great salad topper. Kids love to scoop it up with blue corn chips (or any crackers you have on hand), as a hearty after-school snack. With 6 veggies in every bite, it’s a winner for parents and for kids!

Ingredients
- 30 ounce – black beans, canned
- 15 ounce – corn, canned
- 5 medium – plum tomato
- 1 stalk – green onion
- 1 medium – bell pepper, green
- 1 medium – bell pepper, red
- 1 clove – garlic
- 2 medium – lime
- 1 teaspoon – sea salt
- 5 tablespoon – olive oil
OPTIONAL:
- 4 ounce – tortilla chips
Directions
- Drain and rinse black beans and corn. Chop tomatoes, green onion, and bell peppers. Mince garlic.
- Add all ingredients above (minus the garlic) to a medium bowl. Stir to combine.
- In a smaller bowl, whisk together juice from the limes, oil, salt, and garlic. Pour over the vegetable mixture and fold until evenly coated.
- Chill and serve cold. Best when served within 24 hours.
Eat this by itself or serve with tortilla chips and use as a dip. It’s great either way!
