90 Second Taco Soup Recipe

Did you know that you can make soup in your high-speed blender (like Vitamix or Blendtec)? Try this delicious taco soup. You can eat this soup as a side dish or a snack, but if you want to make this a stand-alone dinner dish you can add some toppings to it to make it more hearty. Check out some ideas below.

 

Serves: 4
Prep Time: 2 minutes

Ingredients

  • 1 medium – carrot
  • 1/4 medium – avocado
  • 2 sprigs – cilantro
  • 3/4 teaspoon – garlic powder
  • 3/4 teaspoon – sea salt
  • 1 teaspoon – cumin, ground
  • 1/4 teaspoon – basil, dried
  • 1 teaspoon – chili powder
  • 1/2 tablespoon – onions, dehydrated flakes
  • 2 medium – tomato, red
  • 2 cup – Warm Water (80-90°F)
  • 5 ounce – tortilla chips

Directions

  1. Prepare carrot by removing any remaining stem and wash (it doesn’t need to be peeled). Cut into 2-3 pieces and toss into a high powered blender with the next 10 ingredients.
  2. Select the soup setting on the blender and allow to run the full cycle, or simply follow the manufacturer instructions.
  3. Serve with remaining tortilla chips.

Note: If you do not have a high powered blender, place cut carrot into a microwave-safe dish with a small amount of water. Heat for 30-second intervals until it becomes soft enough to blend with the remaining ingredients. Blend ingredients as stated in the recipe and then heat the pureed mixture to the desired temperature in a saucepan on stove top.

Mix-ins or toppings for 90 Second Taco Soup

With all the veggies this blended soup can certainly stand alone, but if I’m making this for a filling dinner that I want everyone to enjoy, I almost always add some extra chunky ingredients for texture.  After the soup is completely mixed, I will include:

  • Cooked leftover chicken, or rotisserie chicken- this is a great dinner idea for leftover chicken!  And it makes this taco soup even more balanced.
  • Black beans- black beans are a great way to add protein and fiber, and they taste great in taco soup.
  • Shredded cheese- because everything tastes better with cheese!
  • Avocado- although we also add avocado to the blended soup for creaminess, we like some extra chunks on top!
  • Tomato or salsa- this taco soup is already full of tomatoes, but if you love salsa, feel free to add more!
  • Corn- so great for fiber and an extra bit of sweetness!
  • Cilantro- extra cilantro for the top is great, but definitely cut it up into small pieces for the kids.
  • Ground beef- if we didn’t use the chicken, sometimes I’ll add ground beef if I have some on hand.
  • Other beans, like kidney beans-  more fiber and deliciousness.

And then to top it off, we like sour cream and more cheese!
