Ingredients
2 ripe avocados, halved, pitted and scooped out about 2 tablespoons of flesh
4 organic eggs
Salt and freshly ground black pepper, to taste
2 tablespoons chives, minced
Directions
- Preheat the oven to 425 degrees F.
- Arrange the avocado halves into a large baking dish, cut side up.
- In a small, bowl, break an egg and then carefully transfer into an avocado half.
- Repeat with the remaining eggs.
- Bake for about 15-20 minutes or until the desired doneness of eggs.
- Serve immediately with the sprinkling of salt, black pepper, and chives.
