Ingredients
- 2 large avocados, peeled, pitted and chopped
- ½ cup fresh basil leaves
- 3 tablespoons extra-virgin olive oil
- Salt and freshly ground black pepper, to taste
- 4 (4-ounce) cooked grass-fed chicken breasts, shredded
- ¼ cup cashews
Directions
- In a food processor, add all ingredients except chicken and cashews and pulse until smooth.
- In a bowl, add chicken and avocado mixture and gently, toss to coat.
- Serve immediately.
