Cod with Watercress

Serves: 4 persons

Ingredients

For Cod

  • 3 tablespoons olive oil
  • 4 (5-ounce) cod fillets
  • Freshly ground black pepper, to taste

For Watercress:

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 bunches fresh watercress, trimmed
  • Salt, or to taste
  • 2 tablespoons water
  • Juice of 1 lemon

Directions

  • For cod: in a large skillet, heat the oil over medium heat and sear the cod with ground black pepper or about 2-3 minutes.
  • Flip the cod fillets and cook, covered for about 4-5 minutes. 
  • Meanwhile, in another large skillet, heat the oil over medium heat and sauté garlic for about 1 minute.
  • Add watercress and salt and cook for about 1 minute, stirring continuously.
  • Stir in water and cook, covered for about ½ minute.
  • Divide watercress onto a serving plate.
  • Top each plate with 1 cod fillet squeeze one lemon on top of the fish and serve.
