Collard Greens Soup

Serves: 4 persons

Cooking Time: 9 minutes


  • 2 bunches collard greens 
  • 2 tablespoons olive oil
  • 1 small yellow onion, cut into thin rings
  • 1 garlic clove, minced
  • 1 cup water
  • Salt, to taste
  • Slices of avocado and chopped tomatoes for topping


  • Remove the tough stems of collard greens and then, cut into thin strands.
  • Place the oil in the Instant Pot and select “Sauté”. Then add the onion and cook for about 4-5 minutes.
  • Add the garlic and cook for about 1 minute.
  • Select the “Cancel” and stir in collard greens and water.
  • Secure the lid and place the pressure valve to “Seal” position.
  • Select “Manual” and cook under “High Pressure” for about 3 minutes.
  • Select the “Cancel” and carefully do a “Quick” release.
  • Remove the lid and stir in salt.
  • Top with slices of avocado and chopped tomatoes and enjoy.
