Easy Cabbage Salad

Ingredients

DRESSING:

  • 1/3 cup – yogurt, plain (use vegan options if dairy is a problem)
  • 1/3 cup – olive oil
  • 3 tablespoon – apple cider vinegar
  • 3 tablespoon – maple syrup, grade B
  • 2 teaspoon – poppy seeds (optional but adds colour and crunch)
  • 1/2 teaspoon – mustard, ground

SALAD:

  • 8 cup – shredded veggies, bagged (such as broccoli slaw) (to save money you can also easily shred a cabbage in your food processor)
  • 1 cup – pecans, chopped
  • 1 cup – cranberries, dried, sweetened

Directions

  1. Whisk all dressing ingredients in a small mixing bowl or glass jar.
  2. In a large mixing bowl, toss all ingredients together until combined with dressing. Serve immediately or let marinate for 30 minutes.
