Flaxseed Porridge

Serves: 4 persons
Preparation Time: 10 minutes
Cooking Time: 5 minutes

For Porridge:

  • 1 cup freshly ground flaxseeds (it’s best to ground flax seeds at home so that you don’t end up eating rancid flaxseeds, which often happens when you buy them ground)
  • 2½ cups unsweetened almond milk
  • 2 large bananas, peeled and mashed
  • ½ teaspoon ground cinnamon
  • Pinch of salt

For Topping:

  • 1.2 cup fresh cherries (pitted) / blueberries / raspberries (if you don’t have fresh berries you can use them frozen. Boil some water and warm them up so you don’t end up eating ice).
  • ½ cup cashews, chopped

1. For porridge: in a pan, add all ingredients and with a wire whisk, beat until well combined.

2. Place the pan over medium heat and cook for about 3-5 minutes, stirring continuously.

3. Remove from the heat and transfer the porridge into serving bowls.

4. Top with cherries and cashews and serve.
