Ingredients
For Porridge:
- 1 cup freshly ground flaxseeds (it’s best to ground flax seeds at home so that you don’t end up eating rancid flaxseeds, which often happens when you buy them ground)
- 2½ cups unsweetened almond milk
- 2 large bananas, peeled and mashed
- ½ teaspoon ground cinnamon
- Pinch of salt
For Topping:
- 1.2 cup fresh cherries (pitted) / blueberries / raspberries (if you don’t have fresh berries you can use them frozen. Boil some water and warm them up so you don’t end up eating ice).
- ½ cup cashews, chopped
Directions
1. For porridge: in a pan, add all ingredients and with a wire whisk, beat until well combined.
2. Place the pan over medium heat and cook for about 3-5 minutes, stirring continuously.
3. Remove from the heat and transfer the porridge into serving bowls.
4. Top with cherries and cashews and serve.
