Ingredients
- ¾ cup unsweetened coconut, shredded
- 1 large banana, peeled and sliced
- ¼ teaspoon vanilla extract
Directions
- Preheat the oven to 350 degrees F. Line a large cookie sheet with a greased parchment paper.
- In a large food processor, add all ingredients and pulse until well combined and smooth.
- With a tablespoon, place the mixture onto prepared cookie sheet and with a fork, flatten each cookie slightly.
- Bake for about 25 minutes or until top becomes golden brown.
- Remove from the oven and keep onto a wire rack to cool in the pan for about 5 minutes.
- Carefully, invert the cookies onto the wire rack to cool completely before serving.
