Food Babe’s Broccoli Quinoa Tabbouleh

1 cup broccoli
1½ cups cooked quinoa
3 tablespoons olive oil, more as needed
3 tablespoons fresh lemon juice, more as needed
¼ teaspoon chili powder
1 cup chopped parsley
½ cup chopped mint
2 scallions, chopped
Sea salt and pepper, to taste
¼ cup pumpkin seeds


  • Place the broccoli in a food processor and pulse until a rice like consistency has formed. Pour into a bowl along with the remaining ingredients. Mix to combine.
  • To serve, place half on the tabbouleh on a plate and top with half of the pumpkin seeds. Enjoy!
