Mussels in Herb Sauce

Serves: 4 persons

Ingredients

2 tablespoons coconut oil
¼ cup onion, chopped

3 sprigs fresh thyme
3 sprigs fresh parsley
1/3 cup water
2 pounds fresh mussels, cleaned
Salt and freshly ground black pepper, to taste
¼ cup fresh parsley, chopped

Directions

  1. In a larger skillet, heat over medium-high heat.
  2. Add onion and sauté for about 4-5 minutes.
  3. Add herbs sprigs and water and stir to combine.
  4. Increase the heat to high and bring to a boil.
  5. Reduce the heat to low and simmer for about 3-4 minutes.
  6. Stir in mussels and cook, covered for about 4-5 minutes, tossing the skillet
    occasionally.
  7. Season with salt and black pepper and remove from heat.
  8. Serve with the garnishing of chopped parsley.
