Pork & Grape Salad

Ingredients

For Dressing:

  • ¼ cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon fresh thyme, minced
  • Salt and freshly ground black pepper, to taste

For Pork Chops:

  • 4 (5-ounce) boneless pork chops
  • 1 teaspoon fresh thyme, minced
  • Salt and freshly ground black pepper, to taste

For Salad:

  • 4 cups fresh kale, trimmed and chopped
  • ¾ cup seedless red grapes, halved (optional)

Directions

  • Preheat the grill to medium-high heat. Grease the grill grate.
  • In a bowl, add all dressing ingredients and beat until well combined.
  • In a large bowl, add pork chops, thyme, 3 tablespoons of dressing, salt and black pepper and combine well.
  • Keep aside for at least 5-10 minutes.
  • Grill the chops for about 4-5 minutes per side.
  • In a large bowl, mix together arugula and grapes.
  • In another bowl, add all dressing ingredients and beat until well combined.
  • Pour dressing over salad and gently toss to coat well.
  • Divide salad in 4 large serving plates.
  • Top with chops and serve.
