Ingredients
For Dressing:
- ¼ cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon fresh thyme, minced
- Salt and freshly ground black pepper, to taste
For Pork Chops:
- 4 (5-ounce) boneless pork chops
- 1 teaspoon fresh thyme, minced
- Salt and freshly ground black pepper, to taste
For Salad:
- 4 cups fresh kale, trimmed and chopped
- ¾ cup seedless red grapes, halved (optional)
Directions
- Preheat the grill to medium-high heat. Grease the grill grate.
- In a bowl, add all dressing ingredients and beat until well combined.
- In a large bowl, add pork chops, thyme, 3 tablespoons of dressing, salt and black pepper and combine well.
- Keep aside for at least 5-10 minutes.
- Grill the chops for about 4-5 minutes per side.
- In a large bowl, mix together arugula and grapes.
- In another bowl, add all dressing ingredients and beat until well combined.
- Pour dressing over salad and gently toss to coat well.
- Divide salad in 4 large serving plates.
- Top with chops and serve.
