Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cups tomatoes, chopped
- 1 cup red lentils, rinsed and drained
- ½ cup quinoa, rinsed
- 1½ teaspoons ground cumin
- ½ teaspoon ground turmeric
- Salt, to taste
- 5 cups water
- 2 cups fresh Swiss chard, chopped
Directions
- In a large pan, add all ingredients except chard and bring to a boil.
- Reduce the heat to low and simmer, covered for about 20 minutes.
- Stir in chard and simmer for about 4-5 minutes.
- Serve hot.
