Ingredients
- 2 tablespoons olive oil
- 1 cup onion, chopped
- 2¼ cups tomatoes, chopped finely
- ½ teaspoon dried thyme, crushed
- 3 cups water
- ¼ cup fresh basil leaves, chopped
- Salt and freshly ground black pepper, to taste
Directions
- In a large soup pan, heat oil over medium heat and sauté onion for about 4-5 minutes.
- Add tomatoes, thyme, and water and bring to a boil.
- Reduce the heat to low and simmer, covered for about 15 minutes.
- Remove from the heat and keep aside to cool slightly.
- In a blender, add soup in batches and pulse until smooth (or use an immersion blender).
- Return the soup in the same pan over medium heat.
- Stir in basil and cook for about 3-4 minutes.
- Season with salt and black pepper and serve hot.
