Chicken Salad

Serves: 4 persons
Preparation Time: 15 minutes


  • 2 large avocados, peeled, pitted and chopped
  • ½ cup fresh basil leaves
  • 3 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 (4-ounce) cooked grass-fed chicken breasts, shredded
  • ¼ cup cashews


  • In a food processor, add all ingredients except chicken and cashews and pulse until smooth.
  • In a bowl, add chicken and avocado mixture and gently, toss to coat.
  • Serve immediately.
