Ingredients
For Cod
- 3 tablespoons olive oil
- 4 (5-ounce) cod fillets
- Freshly ground black pepper, to taste
For Watercress:
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 2 bunches fresh watercress, trimmed
- Salt, or to taste
- 2 tablespoons water
- Juice of 1 lemon
Directions
- For cod: in a large skillet, heat the oil over medium heat and sear the cod with ground black pepper or about 2-3 minutes.
- Flip the cod fillets and cook, covered for about 4-5 minutes.
- Meanwhile, in another large skillet, heat the oil over medium heat and sauté garlic for about 1 minute.
- Add watercress and salt and cook for about 1 minute, stirring continuously.
- Stir in water and cook, covered for about ½ minute.
- Divide watercress onto a serving plate.
- Top each plate with 1 cod fillet squeeze one lemon on top of the fish and serve.
