Eggs in Avocado

Serves: 4 persons
Preparation Time: 10 minutes
Cooking Time: 20 minutes


2 ripe avocados, halved, pitted and scooped out about 2 tablespoons of flesh
4 organic eggs
Salt and freshly ground black pepper, to taste
2 tablespoons chives, minced


  1. Preheat the oven to 425 degrees F.
  2. Arrange the avocado halves into a large baking dish, cut side up.
  3. In a small, bowl, break an egg and then carefully transfer into an avocado half.
  4. Repeat with the remaining eggs.
  5. Bake for about 15-20 minutes or until the desired doneness of eggs.
  6. Serve immediately with the sprinkling of salt, black pepper, and chives.
